I LOVE classic pumpkin pie! Here’s a super cute mini version, perfect for individual snacks, appetizers or dessert! You can make them in a regular or mini sized muffin tin, and if you’re feeling really fancy you can decorate the crust edges too!

Ingredients:
Crust:

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • 1 stick softened butter
  • 2 tablespoons cold water (add more if needed)

Filling:

  • 1/3 cup white sugar
  • ¼ teaspoon salt
  • 1 ½ teaspoons pumpkin spice
  • 1 large egg
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 5 ounces milk
