Chickpea Kale Salad
This is so delicious, im eating it right now! Its tangy, subtle, and full of flavor. If you don’t like lettuce or kale, put it in a food processor and make leaves really small. I put extra in mine- because i love being good to my body.
Ingredients:
- 1 can chickpeas, rinsed and drained
- 3-4 leaves kale, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 1 clove garlic, chopped
- 1 lemon, juiced
- salt and pepper, to taste
- pecorino romano or parmesan cheese, grated to taste
